SHAKESPEARE RIOT

Based on a famous dispute between an English & American actor at the Astor Opera House in 1849, which came to a head when a production of Macbeth devolved into a riot. This drink is a twist on a classic New York Sour, combining rich spice flavours with smokier and earthier notes.

Orignally an enclave of Irish immigrants at one point Willis Ave had more bars then anywhere else in New York City, today this neighbourhood is home to a rich Puerto Rican community that inspires this smooth and elegant cocktail, marrying a blend of different cultures. Wepa! is more like a Puerto Rican exclamation than a word. It is yelled to express joy and used to celebrate a victory, a birthday or just happiness.

THE BRIDGE TO MEXICO

In the early 18th century, local fishermen discovered Shau Kei Wan as a good storm shelter and moved into the area. But in the last century, Mexican immigrants took over the area and brought with them the famous "Mexican Bun". This cocktail is our twist on The Old Fashioned with a strong Mezcal touch balanced with chocolate.

A tea cocktail with hints of premium local and international flavours. This drink is named after the Sea Captain James Bremer who first set foot upon where Possession Street intersects with Queen's Road Central, the original shoreline of Hong Kong that meets the water.

Wan Chai originally was first home to the many villagers living along the undisturbed coastlines in proximity to Hung Shing Temple, now in Queens Road East. Hung Shing Ye -The God of the Sea is our reinterpretation of Gimlet. A pleasant and elegant cocktail with a great coconut aroma.

In the late 19th century, Causeway Bay was home to Hong Kong's first sugar refinery & ice factory. A rich hub of trade, all manner of spices and cash crop were traded through this key port.
The cocktail holds a mix of different ingredients, much like the trade-era of Hong Kong.
DONT' CRACK THE EGG

Named after the 7th Governor of Hong Kong, Arthur Kennedy was widely disliked as a despot in Ireland, Western Australia & Canada. By the time he became Governor, Sir Arthur's style of governing was to do as little as possible. "Don't Crack the Egg" means leaving things the way they are. This super fresh gin sour has a touch of wood flavours drawn from the Mastic.

Despite its modern association with wealth and horseracing, the name "Happy Valley" was once euphemistically applied. Soldiers stationed near the area coined the name ironically as a swampy marshland which were once host to swarms of mosquitoes. This cocktail has spice and heat to it with a Sichuan mix balanced with Almond and Matcha to create a lively drink.

Canto Mary -

Inspired by the cultural identity and heritage of Hong Kong, the Canto Mary is an infusion of Cantonese flavours with western influences, hearkening back to its colonial past and modern day sophistication. It expresses the tale of two cities - New York City, where bartender Fernand Petiot of the St. Regis New York created the original Bloody Mary - and its Asian equivalent, Hong Kong, where the The St. Regis Hong Kong celebrates the quintessence of Cantonese culture. Local ingredients chang pei (dry tangerine peel), Kowloon soy sauce and Chinese five-spice mix trace back to the travels of spice traders lured to the coastline of Wan Chai and are reminiscent of the rich amalgam of flavours in Chinatown kitchens. The boldness of tobacco leaf smoked Grappa adds an edge to the experience.

Red Snapper -

Barman Fernand Petiot brought his signature vodka and tomato juice cocktail from the famous Paris' Paris Harry New York Bar to the new King Cole Bar at The St.Regis New York, 'spicing things up' until the Bloody Mary was perfected in 1934. Around 1935, the Bloody Mary became known as the Red Snapper. As one story has it, it was Vincent Astor, who objected to the Bloody Mary name and insisted it be changed due to its vulgarity. Also, it is believed at this point that the base spirit of the Bloody Mary changed from vodka to gin, since vodka was rare commodity in America until the late 40s.
